I have to say, I’m not very experienced when it comes to growing vegetable but sweet potatoes are by far the easiest I’ve ever dealt with. Even in a dark dry area with no water or soil (which is what I did with my first sweet potato; I forgot it in the pantry!) it will still grow and flourish. I especially love the baby pink stems that grow from them when they get big since I had never seen anything like it before. Definitely very easy.

All those veggies you mentioned are easy to grow. But some of them, like pumpkins, melons, sweet potatoes, winter squash, even cucumbers, take up lots of space – which is an important factor if you don’t have much space. You can go vertical – any vining plant will grow up, with appropriate support – well maybe not pumpkins and other heavy squash! Net bags help with that. You didn’t mention greens, like lettuce, chard, kale, spinach – they need good soil, but are easy to grow and you can put a lot of plants in a small space, then eat the thinnings.
